ACE and Chiapas-Based Cafeología Launching Auction for Natural-Process Coffees

The nonprofit Alliance for Coffee Excellence and multifaceted Mexican coffee organization Cafeología are partnering to introduce the “Private Collection Auction of Mexican Natural Flavor.”

Taking place Tuesday, Sept. 6, the green coffee auction will feature natural-process coffees grown in the highlands of Chiapas prior to advanced post-harvest processing.

Part of ACE’s ongoing Private Collection Auction series, the auction program follows four years of quality-focused development involving approximately 100 farming families in the Tsotsil indigenous community of Cotsilnam in Los Altos de Chiapas. The project focused explicitly on the development of natural-process coffees, including highly controlled methods in fermentation and drying in cherry.

“Coffee arrived in the Los Altos de Chiapas region in the 70s with classic varieties being cultivated by Campesinos for whom the cultivation of coffee is not merely a commercial element, but rather a form of family and community,” Cafeología founder Jesús Salazar, who holds instructor certifications for both Cup of Excellence and the Coffee Quality Institute, said in an announcement from ACE.

Post-harvest processing, lot selection and traceability is being conducted by Cafeología through its Beneficio Comunitario in its headquarters in San Cristóbal de Las Casas, Chiapas.

Sample sets of coffees in the Private Collection Auction of Mexican Natural Flavor are currently available through the ACE website for $350, while auction registration costs $25.
